Woke up to find out that there was no bread left for my breakfast so I created this recipe and it turned out to be delicious.

1 egg

1/2 cup of organic almond milk (I believe that soya or any other milk will work as well)

1 very full spoon of baby or oats flour

1 very full spoon of wheatgerm

1 spoon of wholemeal flower

1 spoon of Chia seeds

a pinch of tarragon (or any other herb)

a pinch of salt

a pinch of coarse black pepper

Beat it all by hand. If  you think that the mix is a bit too thick and does not spread well on the pan just add a bit of water.  Cook it as you would normally cook a pancake or crepe.

Fill it with whichever filling you like. Mine I filled with creamy goats cheese and egg.
